  • 3 layer blade with SG2 core and hammered ("tsuchime") texture with a black ("kurouchi") finish; the blade is then ground to a matte finish with a highly polished edge for a beautiful and long lasting appearance
  • Thin blade is hand ground and honed to a razor sharp 12 degree double bevel blade angle
  • Traditional Japanese octagonal two-tone pakkawood handle with white ring is ergonomically shaped for a secure grip and is permanently and seamlessly installed to the blade
  • Extra tall gyuto profile (50mm blade height) with a flatter base facilitates easy chopping and slicing using a vertical/push cut motion but the slightly sloped downward tip also allows this knife to be used in a rocking motion
